• Hello September!

    Fall DecorationsWe say goodbye to the summer and say hello to Autumn! The “official” day for Autumn starts here on September 23rd!  I love this time of year, the excitement of back to school has begun, the thoughts of cooler weather, the anticipation of picking apples and pumpkins and the cooking or decorating with fall like colors. Let’s not forget the Mums (Chrysanthemums) that get placed and planted!

    For us here in the United States of America we also celebrate Labor Day the first Monday in September! The weekend before is a big weekend for a lot of people. Time off from work, lake going, events happening! It’s the last Hooray weekend before we knuckle down and hit the school books seriously and the cold weather hits!

    September is also a big birthday month in our family! Our second oldest Grand-son, our youngest Grand-daughter, My Mother, one of my brother’s,  nephews, a niece, a great-niece, an uncle and other family, plus ME all have birthdays in September!

    Yes Autumn is just around the corner. I am looking forward to the leaves turning, the temperatures cooling and to get back to baking and cooking those cooler weather delights. Apple Pie, Pumpkin bread, Chili, Warming soups and the list goes on.

    One of my favorite Soup recipes is a Creamy Sausage & Potato!

    Serves 8 (about 1 cup each) – prep time about 20 minutes – cook time about 20-25 minutes

    Ingredients:

    5 cups cubed peeled Red Potatoes

    1 pound ground sausage

    4 cups Chicken Broth/Stock

    1 cup Heavy Cream

    3/4 cup chopped Celery

    3/4 cup sliced Carrots

    1/2 cup chopped onion

    1 tsp Parsley Flakes

    1 tsp salt

    1/4 tsp freshly cracked Black Pepper

    2 tbsp Flour

    4 cups Shredded Cheddar cheese

    Directions:

    1. Brown sausage in skillet
    2. In a large saucepan or Dutch oven, combine potatoes, broth/stock, celery, carrots, onion, parsley, salt, and pepper. Simmer until potatoes are just tender, about 10-15 minutes.
    3. Combine Heavy cream and flour; add sausage and cream mixture to potato mixture. Stir in cheese and heat until cheese has melted. about 10 minutes.
    4. Ready to serve and enjoy!       Creamy Sausage and Potato soup

    September is a big month for us too! Although around these parts we begin to welcome in the warmer prettier months Spring!!!
